  • Prepare the sauce: In a small bowl, mix together the soy sauce, mirin, sake, and sugar. Stir until the sugar is dissolved. Set aside.
  • Cook the chicken: Heat the vegetable oil in a skillet or non-stick pan over medium heat. Add the chicken pieces and cook for about 4–5 minutes per side, until golden and cooked through.
  • Add the sauce: Pour the teriyaki sauce mixture over the chicken. Cook for another 2–3 minutes, turning the chicken pieces to coat them evenly, until the sauce thickens and becomes glossy.
  • Serve: Serve the chicken hot over steamed rice. Garnish with sesame seeds and sliced green onions if desired.
