  • Desalt the Cod: Soak the salt cod in cold water for 24–48 hours, changing the water 2–3 times a day. Once ready, drain, remove any skin and bones, and shred the cod into small pieces.
  • Prepare the Potatoes: If using fresh potatoes, peel and cut into thin matchsticks. Fry them in hot oil until golden and crispy. Drain on paper towels.
  • Cook the Cod Mixture: Heat olive oil in a large pan over medium heat. Add the onion (and bay leaf if using) and cook until soft and translucent. Add the garlic and cook for another minute.
  • Add the Cod: Stir in the shredded cod and cook for 3–4 minutes, allowing it to absorb the flavors.
  • Combine with Eggs: Beat the eggs in a bowl with a pinch of salt and pepper. Add the fried potatoes to the pan, then pour in the eggs, stirring constantly over low heat. Cook just until the eggs are softly scrambled—moist but not runny.
  • Garnish and Serve: Remove from heat. Sprinkle with chopped parsley and garnish with black olives. Serve immediately. 😋
