This classic French pastry is made with buttery, flaky puff pastry and filled with a luscious vanilla custard. Topped with fresh raspberries and blackberries and finished with a dusting of powdered sugar, these pastries are perfect for breakfast, brunch, or a sweet treat with coffee.

  • Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
  • Roll out the puff pastry and cut it into 8 circles or squares. Place them on the tray.
  • Heat milk and half of the sugar in a saucepan over medium heat until it begins to simmer.
  • In a bowl, whisk egg yolks, remaining sugar, cornstarch, and vanilla extract until smooth.
  • Slowly pour the warm milk into the egg mixture while whisking constantly.
  • Return the mixture to the saucepan and cook over low heat, stirring, until thickened.
  • Transfer to a bowl, cover with plastic wrap (touching the custard), and let cool.
  • Spoon 1 teaspoon of custard into the center of each pastry.
  • Top with raspberries and blackberries.
  • Whisk the egg and milk together and brush the edges of the pastry.
  • Bake for 18-20 minutes until golden brown and crispy.
  • While still warm, brush with honey or apricot jam for shine.
  • Sprinkle with powdered sugar before serving.
  • Enjoy these French pastries with a cup of coffee or tea for a luxurious café-style treat!
